Creamy risotto with avocado, a quick lunch when you don’t feel like cooking for a long time!

On days when we don’t spend much time in the kitchen, we decide on lunches that are ready quickly, and this risotto is definitely one of those!

Although we usually eat avocado on toast or in guacamole, by combining our favorite ingredients we came up with this super pesto, which is often found on our menu with rice or bulgur.

You will need 20 minutes and the following ingredients:

  • 1 avocado
  • 300 g kremastog posnog sira/skyra
  • many 1/2 lemons
  • 75 g of fried and drained bacon
  • spices as desired: salt, pepper, chopped parsley, chili flakes
  • 300 g of rice or bulgur

Procedure:

  1. Cook the rice or bulgur.
  2. During this time, blend the avocado, cottage cheese, lemon juice and spices in a blender into a creamy mixture.
  3. Fry the bacon in a pan until it becomes crispy. (If you don’t eat meat, we recommend briefly toasting sunflower or pumpkin seeds on a pan for a dose of crunch in the dish.)
  4. Mix cooked rice or bulgur with avocado pesto and add bacon (without the fat that drained out during cooking).
