Try: Protein bread with cottage cheese and seeds

I cook more than ever. I try some new recipes, but I also repeat old ones that I remember as being very good. This recipe for protein bread is one such. The bread has an excellent taste, is very rich in proteins and is super easy to prepare.

Ingredients (for a bread mold approx. 20×10 cm in size):

  • 4 eggs
  • 500 g of lean cheese
  • 150 g of smaller oatmeal
  • 100 g oat flour
  • 1.5 teaspoons of salt
  • 2 teaspoons of baking powder
  • 2 tablespoons of freshly ground flax seeds
  • 2 tablespoons of pumpkin seeds
  • 2 tablespoons of sunflower seeds
  • + seeds for sprinkling

Procedure:

  1. Heat the oven to 180 degrees.
  2. Put the eggs in a large container and beat them well.
  3. Add salt, cottage cheese, oatmeal, baking powder, ground flax, pumpkin and sunflower seeds and mix everything well until you get a homogeneous mixture.
  4. Line a baking tray with baking paper, then pour the mixture and smooth it over the top.
  5. Sprinkle the seeds on top and press them down a little.
  6. Put it in the oven for about 45 minutes, or until the toothpick you use to pierce the bread is dry, which is a sign that the bread is baked inside.

This bread is an excellent substitute for unhealthy varieties of bread and you can eat it in all occasions where you would normally eat bread: from spreading peanut butter and jam, to bread with some stew.
