Protein lunch: A mixture of spinach, mushrooms and cheese

Mushrooms, spinach, three types of cheese and lots of healthy nutrients. Yes, this meal is one of those that you should include in your regular meal menu.

Considering that it is in the form of a complex, the preparation of this protein dish should not take you much time, and considering the ingredients, I believe that the taste will certainly suit you.

The next time you don’t know what to have for lunch, remember this idea. You will be immensely grateful to us. 

Ingredients:

  • 230 g of fresh mushrooms
  • 1/2 teaspoon of chopped garlic
  • coconut oil (spray)
  • 300 g of spinach
  • 4 large eggs
  • 230 ml of milk
  • 60 g of feta cheese
  • 25 g of Parmesan cheese
  • 60 g of shredded mozzarella
  • Himalayan salt, pepper

Protein lunch

Preparation:

  1. Preheat the oven to 180 degrees. Wash the mushrooms and chop them thinly. Chop the garlic as well.
  2. Then put the mushrooms, garlic, a pinch of salt and pepper on the pan that you previously sprayed with coconut oil.
  3. Sauté the mushrooms and garlic until the mushrooms are soft and all their moisture has evaporated, about 5 to 7 minutes.
  4. Also spray the refractory container in which you will put everything with oil.
  5. At the bottom of the bowl, place the spinach that you previously dried with a paper towel. Place pre-sauteed mushrooms on top of the spinach, and crumbled feta on top of them.
  6. Whisk the eggs, milk and Parmesan cheese in a bowl. Add a little pepper. Pour the egg mixture over the vegetables and crumbled feta.
  7. Put everything together in the oven for 45 to 55 minutes, or until the top of the mixture takes on a golden-brown color.
