And we in the fitness world really stick to traditions, especially Christmas ones. Custom dictates that cod is traditionally eaten on Christmas Eve, most often in the form of dried cod “on white” or various cod pâtés. You can love cod prepared in these ways or shy away from the very smell of dried cod, but what they have in common is that they are usually prepared with a lot of extra fat and unhealthy additives.
That’s why in our fitness.com.hr kitchen we have come up with something that combines tradition and fit nutrition – healthy cod spread! It tastes fantastic, and it takes only about 30 minutes to prepare. It is made from frozen or fresh cod, so you won’t have to fight with the pungent smell of dried cod either.
The spread is best served together with homemade protein bread.
Ingredients (for 2-3 people):
- 200 g of cod fillet (thawed or fresh, boneless)
- 1 bay leaf
- 1 teaspoon of peppercorns
- Sun
- 3 tablespoons of cottage cheese
- 1 tablespoon of Greek yogurt
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 tablespoon of chopped chives
- Protein bread (video recipe)
Preparation:
- If you use frozen cod, thaw it (a few hours at room temperature). Put it to boil in a large amount of water, to which you have added a bay leaf, peppercorns and 1/2 teaspoon of salt. Cover and cook for about 20 minutes. When the cod is cooked, drain it and remove any bones. Tear it into pieces and put it in a bowl.
- Add lean cheese, Greek yogurt, coarsely chopped garlic, olive oil, lemon juice, salt and pepper, and chopped chives to the cod. Blend everything well with a stick mixer into a uniform spread and place in a serving bowl.
- Cod spread is ideal for serving on Christmas Eve, and it is recommended to spread it on homemade protein bread (one of the earlier videos).
- Store the spread in the refrigerator and use it within a day.
