Breakfast for the whole family: Omelet with broccoli from the oven

I declare this with full right: there is no better breakfast than a combination of eggs and vegetables. What follows is an excellent breakfast for the whole family.

Ingredients:

  • 8 eggs
  • 1 clove of garlic, sliced ​​as small as possible
  • 2 tablespoons of olive oil
  • 250 g of broccoli florets, cut into small pieces
  • Sol, explain
  • 45 g of grated Parmesan or another cheese

Preparation:

Heat the oven to 180 degrees.

Heat 1 tablespoon of oil in a frying pan and add the garlic, so that it becomes slightly glazed, but not browned. Add the chopped broccoli florets and let it simmer gently for just about a minute.

Add a couple of tablespoons of water, salt and pepper, then cover and let everything cook slowly for about 2-3 minutes, so that the broccoli softens a little.

In another bowl, beat the eggs, salt and pepper and shake the broccoli. Now pour the mixture into a deep baking dish and put it in the oven for a few minutes, until a crust forms around the edges.

Take it out, sprinkle the top evenly with parmesan, then return to the oven and bake for about 12 minutes, until the mixture is completely baked, all the way to the middle of the pan.

Cut into cubes or triangles and eat warm.
