Recipe for Valentine’s cookies

Today something different and useful, not only for the better half, but also for us and the family. If you happen to be wondering what you could prepare at home for Valentine’s Day (something small, of course, because we are expected to go out for dinner, even with a friend, right?), here is a quick and easy recipe for cookies full of love, that smell like strawberries. 

The shape? The heart of course! Valentine’s cookies consist of two hearts of the same shape, and the jam acts as a filling and “glue”: the upper shape has to be additionally engraved in order for the jam to appear on the surface. It’s a good idea to get two heart-shaped cookie cutters, one smaller than the other.

 

Ingredients for 20 cookies

  • Flour 250 g
  • Baking powder 6 g
  • Sugar 100 g
  • 1 vanilla pod
  • 1 egg
  • Butter 125 g
  • ½ lemon peel
  • Strawberry jam

Making cookies

Take the butter out of the refrigerator one hour before processing, cut it into small pieces and let it soften at room temperature. Sprinkle flour on the work surface, and butter and all other ingredients, including vanilla, in the middle; mix everything very well until you get a smooth and homogeneous dough. Wrap it in transparent foil and let it rest in the cold for at least half an hour. Using a rolling pin, roll out the sheet no more than ½ cm and cut out an even number of hearts with a heart-shaped cutter, don’t forget that we will need two hearts to make one cookie. At this point, halfway through the upper heart, cut another heart, but of a smaller size (this is basically a heart-shaped hole from which the jam will come out); then place all the hearts on a baking sheet lined with baking paper and bake them at 180° for about 15-20 minutes.

Making cookies

The cookies should not darken, but only slightly color; when they are cooked and still hot, put the strawberry jam on top and cover with the other part of the heart, where there is a small hole in the shape of a heart. Sprinkle the cookies with powdered sugar.
