5 Seitan Recipes to Try Now

Seitan, a Japanese plant protein, is a go-to ingredient for those craving new flavors and textures in their meals. With its meaty texture, it’s often called “wheat meat.” Here are 5 mouthwatering seitan recipes you need to try.

Chicken-style seitan croquettes

Ingredients:

  • Gluten flour : 200 g
  • Edible yeast : 3 tablespoons
  • Garlic powder : 1 teaspoon
  • Onion powder : 1 teaspoon
  • Vegetable broth : 180 ml
  • Salt and pepper

To make these delicious seitan croquettes, start by preparing the seitan dough by mixing gluten flour, nutritional yeast, garlic powder, onion powder and salt in a large bowl. Then add vegetable stock and mix well. Knead the dough for a few minutes until you obtain a homogeneous and elastic texture. Let sit for about 30 minutes.

Preparing the breading

Ingredients:

  • Breadcrumbs : 150 g
  • Paprika : 1 teaspoon
  • Garlic powder : ½ teaspoon
  • Eggs : 2
  • Salt and pepper

In another bowl , prepare the breading by mixing breadcrumbs, paprika, salt, pepper and garlic powder. In a third bowl, lightly beat two eggs. Take a small portion of seitan dough, flatten it slightly and dip it successively in the beaten eggs then in the breading. Repeat the operation for all the kibbles.

Cooking the croquettes

In a large skillet, heat oil over medium heat. Cook the croquettes for 4 to 5 minutes on each side until golden and crispy. Drain on absorbent paper and serve hot with a sauce of your choice.

Seitan marinade

Ingredients:

  • Olive oil : 50 ml
  • Lemon juice : 2 tablespoons
  • Herbs of Provence : 1 tablespoon
  • Salt and pepper

Let the dough rest for 30 minutes then make a marinade using olive oil, lemon juice, Provence herbs, salt and pepper. Coat the seitan with this marinade and leave to rest in the refrigerator for at least an hour, or even overnight , so that the flavors can fully absorb into the dough.

Vegetable preparation

Cut the vegetables of your choice into small pieces such as potatoes, carrots, onions and peppers . Toss them with a drizzle of olive oil, salt and pepper, then place them in a baking dish. Place the seitan in the middle of the vegetables and bake for 40 to 45 minutes at 180°C .

Vegetable Christmas turkey

To impress your guests during the end-of-year celebrations, make this plant-based “turkey” recipe by mixing:

  • Gluten flour : 300 g
  • Edible yeast : 3 tablespoons
  • Garlic powder : 1 teaspoon
  • Onion powder : 1 teaspoon

Then add hot vegetable broth and a few tablespoons of olive oil. Knead until you get an elastic dough and leave to rest for about 30 minutes .

Meanwhile, prepare a vegetarian stuffing based on:

  • Stale bread : 200 g, diced
  • Shallots : 2, finely chopped
  • Mushrooms : 150 g, chopped
  • Onion : 1, chopped
  • Parsley : 1 handful, chopped
  • Crushed nuts : 50 g
  • Eggs : 2
  • Milk : 100 ml (or plant-based milk substitute)

Spread the seitan dough on a clean work surface and place the stuffing on it. Fold the dough over to completely enclose the stuffing and place everything in a baking dish. Bake for 1 hour to 1 hour 30 minutes at 180°C, regularly basting the seitan with the marinade made from olive oil, tamari and maple syrup.

Seitan Bacon

In a bowl , mix (with the same quantities seen previously) gluten flour, nutritional yeast, salt, pepper and a few tablespoons of vegetable oil. Add hot vegetable stock and knead until you obtain an elastic dough. Leave to rest for ten minutes then spread the dough out on a clean work surface.

Using a knife or cookie cutter , cut thin slices of bacon, trying to give them an oval shape, like real bacon. Heat a frying pan over medium heat with a drizzle of olive oil and cook the bacon slices for about 3-4 minutes on each side or until golden brown and nicely toasted. Serve hot in a sandwich, with scrambled eggs or with sautéed vegetables.

Seared Seitan with Mushrooms

Start by preparing your seitan following the usual recipe to obtain an elastic dough with gluten flour, nutritional yeast, salt and pepper, as well as vegetable broth. Then cut the seitan into small pieces.

Cooking Mushrooms and Seitan

In a large skillet, sauté a chopped onion in a drizzle of olive oil until soft. Then add : 250 g of button mushrooms, cleaned and cut into quarters, then the pieces of seitan. Cook over medium-high heat for about 10 minutes , stirring regularly so that everything browns evenly.

Creamy sauce

While the mixture is cooking, prepare the creamy sauce by mixing 200 ml of vegetable cream (soy or oats) with a teaspoon of mustard, salt and pepper . Pour this sauce over the seitan and mushroom mixture and simmer for another 5 minutes . Serve hot over white rice or fresh pasta.
