Pancakes are a good idea every day. However, so that you don’t eat the same pancakes every day, we bring you 5 new recipes for healthy pancakes, so that every day of the week you can enjoy a new, healthy version of this favorite dessert.
1. Keto pancakes
Ingredients:
- 50 g of almond flour
- 115 g of creamy cottage cheese
- 4 eggs
- 1 teaspoon of grated lemon zest
- Coconut oil, for baking
Procedure:
- Mix almond flour, cream cheese, eggs and lemon zest in a bowl.
- Mix until you get a uniform creamy mixture.
- Heat the pan and add a little coconut oil, then pour the mixture as you would when baking classic pancakes.
- Bake each pancake for a few minutes on both sides.
- To stay in keto mode, we advise you to top these pancakes with zero carb syrup.
2. Banana pancakes
Ingredients:
- 1 banana
- 2 eggs, beaten
- A little baking powder
- A little vanilla extract
- 1 teaspoon of coconut oil
Procedure:
- Put the torn banana in the bowl and squeeze it with a fork until you get a uniform cream.
- Then break the eggs into the banana, add a little baking powder and vanilla extract.
- Oil the pan with coconut oil and pour the mixture part by part, for small American pancakes.
- Bake each pancake for about a couple of minutes on each side.
- For the filling, we recommend some healthy jam or simply squeeze raspberries and make a quick spread for your healthy pancakes.
3. Protein pancakes
Ingredients:
- 2 tablespoons of ground flax seeds
- 20 g of almond flour
- 300 ml of milk of choice
- 200 g of quinoa bread
- 1 banana, mashed
- 2 tablespoons of maple syrup
- Coconut oil spray, for baking
Procedure:
- Mix the ground flax seeds and 6 tablespoons of water in a small bowl and let it stand. A gelatinous mixture will be made.
- Add almond flour, milk, quinoa flour, banana, maple syrup and a little salt to a blender.
- Stir the mixture of flax and water to make sure that it has turned into gelatin, then add it to the blender and blend everything well.
- Spray the pan with coconut oil spray and spread the mixture part by part on the pan, like small American pancakes.
- Bake for a few minutes on each side, until the pancakes have a nice golden brown color.
- Before each new shake of the mixture, spray the pan with oil again so that the mixture does not stick to you.
- Top these pancakes with whatever you want, we recommend Proteinella or some nut butter
4. Paleo pancakes
Ingredients:
- 4 eggs, separate the whites from the yolks
- 2 ripe bananas
- 100 g of almond flour
- 3 tablespoons of coconut flour
- 1 teaspoon of baking powder
- A little cinnamon
- A bit of salt
- Coconut oil spray
Procedure:
- In a large bowl, mix egg yolks, bananas, almond flour, coconut flour, baking powder, cinnamon and salt.
- In another bowl, mix the egg whites with a mixer until stiff.
- Gently mix the egg whites into the second mixture, preserving the foamy structure as much as possible.
- Spray the pan with coconut oil and pour the mixture part by part to make small, American foam pancakes.
- Bake each pancake for a few minutes on each side.
- Choose some berries for the filling.
5. Coconut pancakes
Ingredients:
- 100 g of Greek yogurt
- 2 tablespoons of maple syrup
- 3 eggs, separate the whites from the yolks
- 40 g of coconut flour
- 1/2 teaspoon of baking powder
- A bit of salt
Procedure:
- In a large bowl, mix yogurt, egg yolks, maple syrup and ghee.
- Add coconut flour, baking powder and salt and mix gently.
- In another bowl, beat the egg whites with a mixer until stiff.
- Then gently mix the egg white into the mixture with the yolks, so that you keep the foamy structure as much as possible.
- Spray the pan with coconut oil spray and pour a few small amounts of the mixture (depending on how big your pan is), to get small American pancakes.
- Bake each pancake on both sides for a few minutes, until they get a nice color.
- Spread with nut butter or some spread.
