Spinach roll: We have a recipe without eggs and with a delicious filling

Admit that this was a very fun experiment for me. Make a roll without eggs , without it being full of flavor, without falling apart or cracking, and without being tough.

There are some recipes for lean rolls of this type that do not contain eggs, I tried some, but what I lacked in them was, in short, “flavor”.

 

Namely, all those recipes just left out the eggs and increased the amount of flour – which can be really good for someone, I won’t go into personal preferences, but I had the feeling that I was eating too thick, stringy pancake . That’s why I was thinking about how to fix it.

Of course, the first thing that seemed logical to me was to play with orange sweet potato or pumpkin, as I have already done many times with biscuits. What happened was that I did not succeed (which does not necessarily mean that it is not possible (!)) to get the necessary elasticity of the dough so that the roll could be rolled up nicely. That’s her task, isn’t it?!

What turned out to be the best solution for me in the end?

A paste made of chickpea flour , spices and olive oil that you make in a few seconds from the above ingredients and then mix it with carbonated mineral water. That will play the role of eggs in today’s recipe.

Ingredients for the roll:

  • 300 g of spinach
  • 230 g of smooth wheat flour
  • 30 g of chickpea flour
  • 2 teaspoons of salt
  • 1/2 teaspoon of pepper
  • 1 teaspoon of garlic or onion powder
  • 400 ml of mineral water
  • 2 teaspoons of baking powder
  • 4 soup spoons of olive oil .

The ingredients are sufficient for a large sheet (dimensions 40 x 40 cm, but other dimensions of a large sheet can also be used). If you are making the roll in a tin measuring, for example, 22 x 30 cm, then you need to halve the dose.

Ingredients for the filling:

  • 240 g of boiled chickpeas (can also be canned)
  • 230 g of boiled white beans (canned)
  • 4 soup spoons of vegan mayonnaise
  • 100 g of fresh tofu (you can omit tofu from the recipe if you wish)
  • if necessary, salt, pepper, chives and nutritional yeast.

Preparation

  1. Steam the spinach , two minutes is enough for it to wilt and, if necessary, chop it into smaller pieces.
  2. Mix wheat flour and baking powder well , and mix chickpea flour, salt, pepper, garlic or onion powder with oil . You will get a thick yolk-like mixture, which you will then pour into mineral water and mix everything well.
  3. Add the cooked spinach to the flour, pour in the previously made liquid and mix everything well.
  4. Pour onto baking paper, spread evenly and bake for 10-15 minutes in a preheated oven at 200 °C .
  5. Immediately after removing from the oven, together with the baking paper, wrap it in a damp cloth, carefully forming the shape of a roll. Leave it so formed to cool, and in the meantime make the filling.
  6. Make the filling by grinding all the listed ingredients to a cream texture , with a stick mixer (a bit more difficult, but doable) or in a food processor. You can leave out the tofu, the filling will be compact enough without it, if you don’t like it. If you want more texture in the filling, turn all the ingredients into a cream, but add the tofu separately to the already formed cream by crushing it. You will get a more “cheesy” texture.
  7. Carefully unroll the roll, spread the filling and roll it back up. Cover with cling film or aluminum foil and leave for at least one hour in the fridge to set before cutting.

Serving suggestions

You can prepare and serve the same mixture for the roll, as well as the filling, in two other ways . For example, you can bake American pancakes from the roll mixture and cover them with filling. If you have a waffle maker, you can make waffles using the same principle , serve them with filling, some raw vegetables and/or nuts and seeds , and you’ve got a great nutritious meal.
