This is excellent! The preparation is simple, and the cheeses that are added to the zucchini add aroma, fullness of taste, but also increase the protein content.
Ingredients:
- 200 g + 1 tablespoon grated zucchini
- 2 eggs
- 1 teaspoon of fresh parsley, chopped as small as possible
- 15 g of onion, finely chopped
- 60 g of wholemeal flour
- 30 g + 1 tablespoon of grated parmesan cheese
- 110 g of grated mozzarella
- Sol, po ukusu
- 2 tablespoons of olive oil
Procedure:
In a medium-sized bowl, mix grated zucchini, eggs, onion, flour, Parmesan cheese, mozzarella and salt. Mix everything well until you get a uniform mixture.
Heat a little oil in a pan, then use a spoon to separate parts of the mixture, form patties between the palms of your hands and fry them in the oil for a few minutes on each side, until they get a nice golden-brown color.
Serve with yogurt or some creamy fresh cheese.
