Ingredients:

• 1/2 pound fresh mozzarella, cut into small chips (makes about 1 ¼ cups)
• 3 Tablespoons of extra virgin olive oil
• 1/3 cup coarsely chopped fresh basil leaves
• 1/2 teaspoon freshly grated lemon zest (from about a quarter of a lemon)
* Kosher salt and freshly ground black pepper
* 1 pint (about 18) cherry tomatoes, rinsed without the stems

Instructions:

1. In a medium bowl, combine the mozzarella cheese, oil, basil, zest, 1/2 teaspoon salt and ¼ teaspoon pepper.

2. Refrigerate for at least 2 to 4 hours before assembling and serving.

3. When you are ready to assemble, cut each cherry tomato in half and scoop out the insides with a melon baller or a teaspoon. Sprinkle lightly with salt.

4. Turn over on a paper towel and let the tomatoes drain for at least 15 minutes.

5. Fill each tomato half with a small teaspoon of the cheese mixture. Arrange on a serving platter. Serve immediately or wrap and refrigerate for up to 2 hours.

Serving size: Makes about 8-10 rolls

* 3 small zucchini
* About 2 Tablespoons of olive oil
* Kosher salt
* 3 oz. goat cheese, at room temperature
• 1 Tablespoon of finely chopped oil-packed sun-dried tomatoes, drained well
* Heaping 1/2 tsp fresh thyme, chopped
• 2 Tablespoons freshly grated Parmigiano Reggiano

Instructions:

1. Cut off both ends of the zucchini and heat a grill over high heat. Cut the two long sides just a little to even out their shape; discard the toppings.

2. Cut the remaining zucchini into strips lengthwise, each about 1/4 inch thick. Brush both sides of the strips with a light layer of olive oil and season with a touch of salt. Place the slices on the hot grill at a 45° angle to the grates and grill, covered, until golden brown and soft, 3-4 minutes on each side.

3. Check the zucchini while they are cooking and gently move the slices with tongs for an even browning; be careful not to overcook. When finished, drape them on a cooling rack to prevent them from steaming while they cool.

4. In a bowl, mix the goat cheese with the dried tomatoes, thyme, 1 teaspoon of olive oil and 1/8 teaspoon of salt. Spread a heaped teaspoon of filling on one side of each zucchini slice (use a mini spatula or your fingers to spread). Roll the zucchini, but not too tightly. Place the rolls on a baking sheet lined with parchment paper or aluminum foil.

5. Heat the grill. Sprinkle with a little grated Parmigiano and brown under the grill, for about a minute.
